Intense cherry flavor leads the charge before caressing the palate with layered notes of spice and a long sweet peppery finish. Makes an eventful pairing with baked Brie, Chévre and Pâté, and as a savory topping for duck, pork and venison.

    The Pepper: ah-bahn-AIR-oh, meaning from "Havana", is an intensely spicy chile with distinctive flavor and tropical fruit notes. Blended in the right amount, it gives the cheerful Cherries a lingering sweet spicy edge.

    Petit Basque
    This French semi-hard cheese is aged for 70 days and has a smooth chewy texture. It is mild and nutty, and slightly fruity. Made with sheep's milk.
    Fontina Val d'Aosta
    This cheese is best noted as a savory and fruity table cheese. Aged for 90 days, it's extremely aromatic (some might say "pungent") with a slightly grassy flavor. Made from cow's milk.
    Capricho de Cabra
    A rindless, fresh goat cheese, like a Spanish version of French chevre, but the cheese is denser and super creamy. On the palate expect a burst of citrus flavor with a sweet and salty finish.
    This cheese has been called the Dutch Gouda with an Italian flair. Aged for five months it has a nutty flavor with a firm, smooth texture of a young Gouda. Made from cow's milk.
  • Brie En Croute With Spiced Cherry Preserves
    (Serves 4, Prep time: 10 min, Total time: 30 min)

    What to get
    ½ package frozen puff pastry, thawed
    1 small wheel Brie- chilled (in freezer)
    1/2 jar PRiMO Spiced Cherry Preserves
    1 egg, lightly beaten with 1t water for egg wash (optional)

    How to make
    Preheat oven to 350F. Lay puff pastry on non-stick baking sheet. Slice Brie in half horizontally with knife or dental floss and place one Brie round, rind-side down, onto the pastry. Spread the Cherry Preserves evenly on top. Place the other Brie round over the filling (rind-side up). Fold the pastry edges up over the Brie and press lightly together to seal. Flip the entire package so that the seam is underneath. Brush top with egg wash. Bake for 15-20 minutes.

    How to Enjoy
    Let cool for 5 minutes before serving. Garnish with additional Preserves as needed and serve with your favorite Prosecco, Champagne, or Moscato di Asti.
