  • The Preserve: An expertly crafted blend of vine-ripened berries and flavorful Pasilla chiles give this preserve a truly unique profile. Vibrant berry tones, briefly pervade the palate before leaving behind a lingering sweet peppery aftertaste. Superb with Brie, Telaggio and Aged Sheep's milk cheeses.

    The Pepper: Pah-SEE-Yah, meaning "little raisin", is one of the "Holy Trinity" of dried chiles used in Mexican Mole. Their berry-raisin-cocoa overtones add a little pizzazz to the delicate sweet-tart berries.

    Cabot Clothbound Cheddar
    This English-style clothbound cheddar has a sweet, savory, nutty, and tangy flavor. Aged a min. of 10 months at the Jasper Hill Farms Cellars. A truly delicious treat. Made from pasteurized cow's milk.
     
    Oma - von Trapp Farm/Jasper Hill
    An organic washed-rind cheese that balances pungent and sweet flavors. The paste is soft, buttery, and almost pudding-like, but never runny. Aged 60-90 days. Made from unpasteurized cow's milk.
     
    Parrano
    This cheese has been called the Dutch Gouda with an Italian flair. Aged for five months it has a nutty flavor with a firm, smooth texture of a young Gouda. Made from cow's milk.
     
    Taleggio
    This smear-ripened Italian cheese is one of the oldest soft cheeses produced. It has a strong smell, but its taste is relatively mild with an unusual fruity tang. Made from cow's milk.
     
    Pecorino Toscano
    One of Tuscany's finest Aged Sheep's milk cheeses. This aged Tuscan sheep cheese is milky, toasty and tangy. Not strong or sharp. The texture is mostly semi-firm, depending on age.
  • Berry Salumi Cheese Hors d' oeuvre
    (Serves 4, Prep time: 10 min)

    What to get
    1 - 6oz. Spiced Salumi (We like Calabrese by OLLI)
    1/2 Jar PRIMO Berry Pasilla Preserves
    6oz. Parrano Cheese
    Fresh Lemon Zest or Lemon balm for garnish

    How to make
    Note: This simple Hors d' oeuvre is best served without a cracker.
    For the Salumi- with a sharp knife, cut the end off, slit longways and peel off the skin, then slice into 1/8 inch slices.
    For the Cheese- slice the cheese into small squares or triangles 1/8 inch slices.

    How to enjoy
    Place the Salumi slices onto a flat party platter, add a slice of cheese and a dollop of the preserves and top with either lemon zest pieces or lemon balm. You may wish to use toothpicks. Pair with a chilled glass of Chardonnay or Chianti.
